- 200 g digestive/sweet biscuits
- 100 g melted butter
- 50 g chopped almonds (optional)

- 230 g plain creamy cottage cheese
- 285 mL condensed milk
- 250 mL fresh whipped cream
- 50 mL lemon juice (optional if you would like a flavour)

Instructions
To make the crust
- Put the biscuits in a plastic food bag and crush to crumbs using a rolling pin.
- Transfer the crumbs to a bowl, then pour over 100 g melted butter.
- Mix thoroughly until the crumbs are completely coated.
- To form a solid base firmly press the mixture into a baking container.
For the filling
- Preheat oven to 180 °C.
- Combine the cottage cheese, condensed milk, and lemon juice (optional).
- Stir together and leave the mixture for a few minutes to thicken slightly.
- Fold* in the whipped cream into the mixture.
- Pour the mixture onto the biscuit base and bake for 10 minutes.
- Leave baked cheesecake to cool prior to serving.
- Serve with fresh berries (optional).
Recipe Notes
* A method of gently mixing ingredients-usually delicate or whipped ingredients that cannot withstand stirring or beating. To fold, use a rubber spatula to cut down through the mixture, move across the bottom of the bowl, and come back up, folding some of the mixture from the bottom over close to the surface.
